The direct steam injection and inert gaz injection insure a fast process of cooking and cooling all in respecting the product. The vacuum, meticulously controled, is used to prevent the air from introducing and the oxydation effects resulting. Discharging of the bowl by tilting or by connection mounted on the bottom.
